I agree that the eyes are the most important thing if you are making a photo-realistic texture.
Eyes make the character alive. Moreover, eyes were the most hardest challenge for this project to me.
OK, Lets start how to make an eyes.
First, you have to model 3parts, which are Cornea, iris and pupil.
To make a Cornea, make a nurbs sphere and drag the front part a little to make a cornea shape.
Adding an extra isoparm should help you build the shape.
Cornea is very simple. Just make a polygon torus and make it flat a little bit.
This part is for the dark part in the iris.
I assigned blinn with full transparency for the cornea with a texture map for the veins.
I am using 1k texture map for the iris. It is kinda big map for an iris,but it gives the detail.
Here is the render scene of the eye done.
I also made a eyelashes with nurbs curves. you can use fur, but I bi leave nurbs curves gives a better effect.
Here is a rendered eye with face.
